GAZPACHO
A wonderful cold soup,
which captures the essence of fresh summer vegetables- tomatoes,
cucumbers, green peppers.
Puree in a blender or food processor:
4 large ripe
tomatoes
2 cucumbers
2 green peppers
2 cloves garlic
1 very large onion
Stir in:
2 T olive oil
6 T lemon juice
4 c tomato juice
3 t soy sauce
˝ tsp each of the
following dried herbs:
parsley
basil
thyme
tarragon
Tabasco or HOT
PEPPER SHERRY* to taste
Makes 12 cups. Very refreshing on a hot day! |
BLACK BEAN SUCCOTASH
Sauté in butter/margarine till translucent:
2 c diced onion
2 c diced green and red sweet pepper
2 T minced garlic
Add and cook till hot:
1 qt cooked black beans (that have been well rinsed)
1 lb cut yellow corn, fresh or frozen
4 c chicken broth
